Oosh-kee-boosh-kee this together Swedish Chef style. Pop in the oven, all in one pan mind you. 425 degrees for about 35 minutes. Presto, chango, you have dinner!
I love spicy food. If you are a spice wimp, tone this down a notch. Tofu could easily be substituted for the vegetarians in your gang. Or for the tofu lovers. I know you are out there.
What do you get with these ingredients…
yams
eggs
cheese
spinach
shallots
garlic
salt
pepper

When I really don’t want to make a bunch of dishes or sides that’s pretty much what I do. I put some chicken seasoned with salt & pepper and maybe rosemary or thyme into our large casserole dish and pop some of our garden carrots and potatoes and onion and whatever other vegetables we have that would roast up nice in with the chicken then pop it in the oven. I usually turn the vegetables about 20 minutes before serving to make sure they are thoroughly cooked.

Must remember–the secret to a yummy and easy dish is in the roasting!
