Sometimes the simple way is the right way.

SPICY PANKO CHICKEN STRIPS and ROASTED VEG (adapted from Daily Nibbles)

MARINATE THE CHICKEN FOR 15 MINUTES
~1 cup o’ milk (I used skim)
~A generous amount of tabasco sauce
~A lot of sriracha
~A few glugs of sweet chili sauce (optional)

FOR THE STRIPS

~Panko breadcrumbs
~Creole seasonings
~Garlic powder
~Salt
~Pepper
~Wee bit of flour

FOR THE VEG

~Avocado oil (or whatever you have on hand)
~Salt
~Pepper
~Fresh Rosemary
~Dried rosemary

Oosh-kee-boosh-kee this together Swedish Chef style. Pop in the oven, all in one pan mind you. 425 degrees for about 35 minutes. Presto, chango, you have dinner!

I love spicy food. If you are a spice wimp, tone this down a notch. Tofu could easily be substituted for the vegetarians in your gang. Or for the tofu lovers. I know you are out there.

The In-Laws roll into town today. It will be nice to hang for a few nights before they jet off to Canada. We are hoping to do a nice Sunday night Turkey dinner.
This weekend is Girl’s night out downtown. Can I get a woot,woot! ๐Ÿ™‚
