Good Morning!

 

I have started a Whole 30 today. Basically it is a diet that consists of Meat, veggies, fruit, nuts and healthy fats. A couple of buddies are also doing it. Hit up Costco yesterday and easily dropped $200 bones. As I left, the guy checking my receipt said “You are eating healthy.” Ha! 

 

For breakfast I made poached eggs on spinach, red peppers, and onions with salsa and avocado. A snack was a monkey salad with cashews, coconut flakes, and banana slices. Very good with black coffee.

 

The reason I’m doing this is for health and to slay the sugar dragon that lives part time in my soul. I had my blood work done and my sugars were *way up* where they are not supposed to be. Most likely from indulging on desserts over our vacation. Yikes. Diabetes is not our friend, time to nip it in the bud now.

    Hello! The little one has started Preschool part time and she loves it. Phew! So glad. The teacher says she is very easy going and confident. This is good news. When she is at school, I think she imagines me at home baking all day. She requests these cookies every school day!

I have been enjoying having a little more “ME” time. I am spending my time out in the sun, hiking, biking, swimming, and running. This is the life!

To be three again!

Hey!

My company (HI MOM and Dad!) is gone. I love having company. We have had someone come every month this year. Now what to do. I think I will plan my own trip. But for today, I shall bake.

We made muffins today.

I was reaching for the chocolate chips when Isabella said “Let’s put blueberries in them!” Yes, of course…berries. I quickly closed the pantry and went with my child’s healthier option.

They were pretty good.

Now I just hope the mailman comes by so I can share them…or I guess I could put them in the freezer.
Or maybe gobble them all up.

1.SWIM

An early morning swim woke me up today. It was fun to swim in the moonlight. Only 20 days until the TRI sprint. Weeeeeeee!

2.BIKE

Rain has arrived here in The Valley. Much to the dismay of many road bikers. I was looking forward to a ride today but I don’t want to risk bailing on the slippy surfaces. Can’t wait to try my new TREK out. 🙂

3.RUN

Yesterday I did a 6 mile run for the first time in a very long time. It went well, I was with some people a little faster than me so that helped get it done in around 61 minutes which is a PB for me. I am proud, but not satisfied. 🙂
My IT band started to squeak around 4 miles but I managed to get through it relatively pain free-which is nice.

Now I am sipping on a hot toddy. Hot water, lemon, and honey. Very delicious. Ice packs on appropriate areas.

The In-laws rolled into town last night. I love having Company. We had a nice dinner of honey glazed ham, mashed potatoes, minty peas, and salad. With coffee and dessert too. The most important part.

I’m off to a Doctor’s appointment today for the wee one and then some bonding with the Grandparents. Should be fun.

Another one of my staple meals.

I do not put condensed milk in, but I probably would if I had some open in my fridge. I just used dates to sweeten or a wee bit of maple syrup.
