It was a great long weekend over here in The Valley.

Did a bit of hiking and a bit of cooking. Did 2 hours of hiking today at Pinnacles National Park.

I loved it and so did Mikey.

Another recipe that was a winner over here was Paleo Italian Meatballs. So yummy.

We had them with Rao sauce from a jar and spaghetti squash and or angel hair pasta. Everything about this recipe was spot on. I used about 90% pork and 10% beef for the balls. This may get into the weekly rotation.

Last but not least–I made some “Hamburger Helper” and used it to make egg muffins. A friend of mine makes these all the time with turkey so I thought I would try it. I love having different things for breakfast. Variety is the spice of life. Just whisk up some eggs and throw in some cooked up meat and veg and Bob’s your Uncle.

I’m going to try and get into a good workout regime this week. I’m really an all or none exercise person. If I’m on a good roll I will work out everyday. If I’m on a bad roll I’m worse than a three toed sloth in the Amazon coming down once a week for a poop. Yes, I went there. That is all.
