Today was a baking kinda day. A hot cup of coffee or tea kinda day. Really, it was. There were even clouds in the sky.

I had most of the ingredients for one of the muffin recipes.

PUMPKIN MILLET MUFFINS

I did use yogurt instead of buttermilk. Also, I had sliced almonds instead of pumpkin seeds. They turned out wunderbar.

Thanks to my kitchen assistant who helped stir the batter.

Very yummy topped with coconut butter and raspberry jam. šŸ™‚

Also good with real buttah and honey. Or plain.
