Hey there! How are you guys doing?

We have spent the morning hibernating inside because of the rain. We have been enjoying yummy leftovers though.

The other night, we roasted a chicken Big Daddy style.

Coat chicken with lots of olive oil, garlic, red pepper flakes, herbs de provence, salt, pepper, and garlic powder. Roast for about an hour at 375! Don’t forget to cut the chicken down the back and spread it on a foil lined cookie sheet.

Our modest roast chicken lasted us 3 days! Now that is pretty good.

So did our mashed potatoes. Whipped to perfection in the Kitchen Aid mixer by Mikey.

Just add butter, cream, salt and pepper.

We roasted Brussels Sprouts in the oven for about 30 minutes. Those guys had olive oil, salt, pepper and sliced almonds. We sliced them in half too. The crispy bits were the best.

Cooked up some fresh cranberry sauce with berries, lemon juice and zest, orange juice and zest, brown sugar, apple juice and water. So tart and lively!

I was sure to make a swimming pool with my mashed potatoes just like Uncle Joe does. I learn from the best! πŸ™‚

It was nice to make a meal together. A little red wine and some limonata washed it all down.

The baby you ask?

She was tucked away in bed, fast asleep. Lately she has been going to bed at around 7pm and sleeping until 7am. Sometimes she gets up for a snack around 3am but then goes right back to bed! Fine by me. She has been napping at 9am and 1pm.

After our big feast she enjoyed some yogurt, pumpkin, and banana.

Rewind to this morning. I had a cookie for breakfast and then…. I got the vacuum out! Can you believe it! Tidied the baby’s room and even dusted.

I think we are going on a family walk to REI to check out some watches. Gotta be ready for the Sunday morning run tomorrow at 830am.
