Yesterday was our last dinner with family. My Father-In-Law passed through town on his way to Southern Cali. Michael and I decided to make an ‘ol tried and true recipe~MEEMO CHICKEN!

It turned out quite saucy and yummy…

This time we laid it upon a bed of quinoa that was cooked to perfection in the slow…err I mean rice cooker…

I made a side salad with some greens, radish and celery…

The vinaigrette was delightful as usual~ white wine vinegar, olive oil, lemon juice and zest, s&p, garlic powder, and some TLC.

For dessert we chomped on some chocolate truffles from Mikey’s coworkers.

‘Twas a very satisfying meal.
