SHELTER UPDATE
The new house is all a go, we just have to wait a bit for the deal to close yadda yadda yadda. We can’t wait to get into the new place.

I have been de cluttering away over here and trying to make the move as easy as possible. Less is more!

I have been doing a bit of meal planning too. Time to get cooking again, it has been awhile. On the list is lentil soup, tofu balls and tofu ricotta lasagna. That’s a lot of tofu, I swear I don’t eat it every week!

Some other ideas…

Greek salad with falafel and hummus. I love fresh falafel!

Green juice for breaky or a snack

Pasta with lemon and garlic

Pierce Street chili

Crockpot sloppy joes

The sun is out today after a few days of grey weather. We spent the morning at Spanish class and then the park. So nice to have the sun back. I can’t imagine you poor saps up North? “P

Oats to Start the Day

The rooster went off at 7am this morning. Or I mean the toddler alarm. She usually sleeps about 7pm-7am and last night was exactly that. The wee one always wakes up hungry, I know the feeling. Off to the kitchen we went!

Oatmeal with PB and bananas. Ground flax stirred in. Wouldn’t want to forget those omega-megas?

We pondered the possibilities of the day and decided to head out for a walk. We loaded up the stroller with essentials like water, wipes, and toys then headed out.

Stopped at Starbucks for a snack mid walk.Munched on a spinach/feta and egg wrap. Picked up some dark chocolate almond milk, plain yogurt, pears, and applesauce at Target. Looking forward to trying the milk in my smoothies. Chocolatey goodness is always a good idea.

Hit up the kid rides at the mall to warm up. It is 9 degrees C out and it feels chilly. You know you have been in Cali too long when…

We were bundled up in sweaters and hats.

Soon it was time to head home for some veggie soup and goldfish crackers. We might make a monkey pie (with silken tofu) later and head out to the park.

Nap time is here and it is time for my iced coffee. Snuggled under my blanket with the heat cranked of course.

Good news on the house front. The sellers accepted our offer! Now to do some paper work and close the deal.

Veggie Burgers and Slaw

Hello there! No word yet on the house front. I guess it is time to wait.

Cooked up some Thai veggie burgers last night.

They had some interesting ingredients like cilantro, broccoli and peanut butter! They turned out really well. I wish I had teriyaki sauce for them though, that would have been even more yummy.
Mikey loved them.

Had them with some red pepper and broccoli slaw. Made some dressing with balsamic vinegar, olive oil, soy sauce, agave nectar and canola oil. Topped with peanuts.

The almost 2 year old? She liked the carrot shreds the best, eaten with tongs. Go figure.

Cooked up a HUGE batch of veggie soup today. I like to have a few portions in the freezer ready to go at a moments notice for when hunger strikes. So easy to make with pantry essentials. Just veggies, pasta and beans—then voila —a soup masterpiece.

Just had a wee bit of coffee ice cream, it hit the spot. Might whip up a decaf espresso and call it a night.

House Hunters

Hola! The weekend is upon us. Yay!
Mikey and I put an offer in on a house today but there are a few other offers in on it too. We won’t know until Sunday. A real nail biter.

The sun is shining here today and we spent the morning at the park. Before that we attended our first Spanish class. It’s called Let’s Play in Spanish. It was a lot of fun. Knowing sign language really helped since Isabella can recognize the sign whilst learning the new language. We sang and danced our hearts out.

My bread experiment turned out yesterday. I made a regular white loaf in the bread maker. The bread was a bit boring but I am looking forward to experimenting with raisins and whole wheat flour next time.

We watched Moneyball last night, pretty good for a baseball movie. I also enjoyed a rum and coke with lime alongside the movie and fresh bread and butter. A good night over all.

A Green Monster Kinda Morning

I did it. I broke my lazy streak. This morning I met my pal Brenda and we hit the trail. Sure it was a major struggle to get out of my warm bed at 6:15am. It was worth it to feel better all day. I even stopped at the store on my way home for some monster ingredients.

Into the Vita went some…

If that doesn’t kick start you I don’t know what will.

Sometimes I add flax oil/ground seeds and cocoa powder. I was inspired by Change of Pace. Her smoothies always look so tasty.

I have never been a huge fan of boozy desserts or jelly roll, but this trifle knocked my socks off. It was made with pound cake and just a touch of sherry. YUM!
Isabella had her own trifle sans sherry and she applauded after she took a bite-now that is what I call a good review!
