Happy New Year!!
I finally got out of my exercise rut with a 3 hour hike and a new exercise class. It is time to bounce back after a long cookie induced coma.
We are so fortunate to have trails pretty much right out our front door. Very Handy. My Husband even packed the kid in one of those hiker packs…all 30 lbs of her. Now that is a workout. I’m not sure what was more tiring, the hills or the 2 year old saying I’m hungry every five minutes.
Decided to try a new to me class called Bodypump tonight. Basically, a weight lifting class to music. I like it a lot and will return.
The weather has been cloudy.
With a side of meatballs.
You can’t go wrong with any of P-Dub’s recipes.
Cupcakes made with dates? Yes, please! My recipe guru over at COP lead me to this one.
The cupcake was not very sweet but the topping made up for that. Everyone liked them, and it makes a small batch. Very important.
We have been up to the usual around here. Grocery shopping, eating, sleeping and repeating.
Oh-but we did get a new couch! ![]()

Check out the painting my FIL created for us! I love it to bits.

Our local WF has a kid play area-genius!
We have been eating a lot of pulled pork, spaghetti squash, and sweet potatoes this week. Time for something different…fish perhaps?
In exciting news Mikey and I will be going away for a few days sans child. It will be strange. What will I do without my sidekick? Hmmmmmm…let me think about that.
Thank Goodness for dependable babysitters.
Cheers! Green smoothie in my coffee cup. Might have to pick some fresh kale in the morning to make another. My cauliflower is really a growing out there too!!

It’s the frosting on those cupcakes that give them their sweetness I think! Your little one looks a lot like Sal

I really liked the density of the coconut flour. I will make them again, for sure.
